Our Wines

Our small vineyard is nestled among acacia and chestnut woods, on Montalbano, facing the sunrise, therefore well exposed to heat and sunlight, sheltered from the winds, and surrounded by the scents of nature. The result is an excellent grape, especially Sangiovese, Trebbiano and Malvasia, sweet and concentrated, with a bright colour, typical of marc. The harvest takes place completely by hand, along the various rows on foot, accompanied by tubs in which the ripe bunches are dropped. And while some baskets are chosen for homemade desserts and the traditional bread with grapes, the grapes harvested are given to small companies in the area for vinification in special steel barrels. We obtain white and a Tuscan red IGT wines, stored in bottles in the traditional cellar with the old wooden barrels. Here, in the underground part of the farmhouse, the temperature is constant, always around 15°C, which allows the wine to be kept in excellent condition, avoiding sudden changes in temperature and sudden changes in humidity. The wine is served with meals in the farmhouse, it can be sold directly on the farm or shipped.

Olive Oil "Il Calesse"

We extract Extra-virgin Olive Oil Il Calesse esclusively by olive squeezing. Its organoleptic and sensorial characteristics come from the variety of olive trees (frantoio, moraiolo, leccino, pendolino) and from the climatic conditions where they live.

Our synthesis

Our Extra-Virgin Olive Oil has the acidity lower than 0,8%. This is why we can call it “Extra-Virgin”. Olives are completely harvested by hand, with traditional care. They are kept in aired plastic boxes for a very short period (max 48 hours), to avoid the fermentation of the pulp. Then we take them to the oil mill, where we obtain our olive oil.

We suggest to preserve it at fresh temperature (10-15° C), and far from light source (its green colour derives from chlorophyll, that modifies in contact to light). We can sell it direcly or send following to an order.

Red and White Wine "Il Calesse"

Fruit Marmelades

We collect fruits and vegetables from the land, which we transform in our laboratory, to produce fresh and genuine jams, with the only addition of sugar. Jams can be tasted with local cheese, especially pecorino, but they are also excellent for tarts or traditional desserts. The production is seasonal, therefore the variety of flavours in our showcase depends exclusively on the natural progress of the harvest.
